Meet my friend Courtney. Not only is she adorable, she is the owner of C Salt Gourmet and makes amazing chocolates, brittles, and truffles! Last week, she stopped by and showed me how to whip up a tasty little treat thats both sweet and savory!

Courtney calls this delicious recipe Farron’s Fave. The name is a play on our friend Farron who loves this decadent treat and Chef Ferran Adria (of the famous Spanish restaurant El Bulli) who used to eat this as a child. To make it, you just need a few simple ingredients that you may already have in your kitchen. It is inexpensive, and you can easily make it for small or large groups.
Ingredients:
Sliced Baguette
Pacific Sea Salt (use larger/coarser salt)
Fair Trade Dark Chocolate Bars
CA Olive Oil (Chef Ferran uses Spanish Olive Oil)

How To:
*Preheat oven to 400 degrees F
*Slice baguette and put on a baking sheet (by themselves) in oven for about 3-5 min. until   warm and golden
*Remove from oven, flip pieces over, put 1 chunk of chocolate on each piece, then put them back in the oven until the chocolate just starts to melt. Keep an eye on it as it can burn easily. Look for the chocolate to go from glossy to shiny/wet looking.
*Remove from oven, plate, drizzle toasts and plate with olive oil and sprinkle with coarse sea salt then EAT!

Brittany: What’s your hottest item?
Courtney: Actually my original, the pistachio cherry chocolate. It’s especially festive during the Christmas season because of the green from the pistachios and the red of the cherries.
B: What inspired you to make a vegan chocolate?
C: It made sense. Chocolate is naturally vegan. It is my “good” chocolate as it has less sugar.
B: Are you a one woman operation and what do you want for C Salt in the future?
C: Yes, I am C Salt with occasional help from my mother-in-law but I see this as being my year to expand and grow. I want to be ready for my busiest season which starts in October and continues through to the end of the year.
B: The question everyone wants to know. Do you ever nibble while you work and are you hiring tasters?
C: My craving for chocolate has diminished over the years. I taste all my work but I don’t nibble anymore and I never have a shortage of people willing to be tasters!
