Wade and I love camping and we try to do it every chance we get throughout the summer. This is our first trip of the year and we are at El Capitan in Santa Barbara. It is beautiful and beachy and oh so relaxing! I love everything about camping: waking up in a tent, cooking outdoors, campfires, getting dirty, no make-up, hot 25 cent showers, wildlife, hikes, beautiful scenery and spending time with my man. I guess we are considered “glampers” because we still like to eat well and bring lots of wine when we camp! One of my favorite camping breakfasts is an open faced BLT of sorts. It is:

*(1) slice of toast with a thin layer of mayo on it
*mixed baby greens and grape tomatoes tossed in olive oil and vinegar on the toast
*several slices of bacon
*an egg…fried or poached
*salt and pepper
*sliced avocado

Throw a mimosa into the mix and you’ve got the perfect camping breakfast!

This trip has been particularly interesting for all of the wildlife sightings we’ve had. Last night I actually had a baby skunk sit on my foot by the campfire!!! Then we had a raccoon open our cooler and steal a pack of Omaha Steaks hot dogs in the night. I wonder if he appreciated the difference?! Today we hiked up El Capitan Canyon and saw chipmunks, hawks, a snakeskin, and a gopher. Tonight we saw a deer and BATS!!! It has been amazing! I wish I could spend another week out here in our tent, sleeping under the stars!
