
Tomatoes and cheese are two of my favorite things in the entire world! These caprese skewers are my perfect snack and they make great party food! My friend Matt of Matt Bites has a version of this treat in his book On A Stick! He finds a way to put almost anything on a stick! Eat well this summer and be inspired!
Mozzarella Caprese Skewers
1 container of small fresh mozzarella balls called Bocconcini
1lb container of grape or other small yummy tomatoes
olive oil
kosher salt
bunch of fresh basil
1cup of balsamic vinegar (optional)
balsamic glaze
don’t forget the mini skewers (cheaper and easier to find in Asian markets)
Soak the tomatoes in balsamic vinegar over night stirring occasionally. This step is optional but the pickling gives the tomatoes an amazing flavor. Remove tomatoes from the vinegar and toss with olive oil and coarse salt. Roast in a 400° F oven until some of the tomatoes begin to wilt. Remove immediately and place on a cool plate so they don’t over cook on the baking sheet. When cool enough to handle, skewer tomato, basil leaves and mozzarella. (2 of each on a skewer) Place a dot of balsamic glaze on each piece of cheese.
This is a really simple, quick, seasonal crowd pleaser!
