grilled peaches with burrata

Peaches are in season right now and there are so many tasty things you can do with them. Wade came up with this super easy dish that combines the sweetness of peaches with the creamy deliciousness of burrata. It’s rich, it’s sweet and I want it in my face right now! Here’s how easy it is to make:
Ingredients
fresh ripe peaches (halved with pit removed) Get them at your local farmer’s market!
basil olive oil or other herb infused olive oil
fresh burrata cheese (or if you are feeling ambitious learn how to make it yourself)
balsamic reduction (you can buy this or see below to make it)

Brush oil onto the cut side of the peaches and place them on a hot grill for a minute or two. Remove and brush again with basil infused olive oil.

Top with a tablespoon of burrata and a drop or two of balsamic glaze. This dish is quick and simple and amazing!

How to Make Balsamic Reduction
2 cups of Balsamic vinegar
Pour vinegar into a small sauce pan and bring to a boil.  Once you’ve got a boil, reduce the heat and allow the vinegar to simmer for about 20-30 minutes or until the vinegar has become thick enough to coat the back of a spoon. When you have roughly 1/2 cup you are probably done. Be careful not to burn the glaze because its easy to do if your heat is too high!Remove from heat and allow to cool. Transfer to a jar and refrigerate. Makes approximately 1/2 cup.
