sriracha deviled eggs

Eggs have become one of my favorite things in the world to eat. I loved them as a child and then took a very long break. I didn’t really fall in love with them again until I was on my honeymoon 6 years ago. We stayed at this funky little boutique hotel called The Gage House in Sonoma, CA where they are known for their fabulous breakfasts. The first morning they served an amazing egg scramble full of delicious herbs from their garden. It’s aroma was intoxicating and I devoured it. That did it. Scrambled, poached, deviled, fried…since then, I can’t get enough!

Over the years our deviled egg recipe has gone from super complicated (20 ingredients) to ultra simple and just as tasty with these 5 ingredients. We also love things with a little heat and these can go from slightly spicy to hot, hot, hot with the addition of sriracha, one of my favorite condiments!

Sriracha Deviled Eggs

mayo
pickled relish
salt
cayenne pepper to sprinkle on top

First, hard boil the amount of eggs you desire. It’s nice to make a few extras to account for mistakes and snacking. Next, halve your eggs with a wet knife, cleaning in between eggs with a wet paper towel. In a bowl, smash up the yolks as fine as possible. Then, add a couple of tablespoons of mayonnaise until the consistency just begins to become creamy and not so dry. After this, you can add Sriracha and and pickled relish in small amounts to achieve the desired heat and sweetness. Finally, pipe or spoon this mixture into the egg halves and sprinkle cayenne pepper to garnish. That’s it! Yum, yum, yum!
