I absolutely LOVE tomatoes and tomato season is one of my favorite times of the year. I last mentioned this love for tomatoes here in my bloody mary post. Tossed with avocado and cheese…wow!!! This is one simple yet flavorful salad! Get it while it’s hot, tomato season ends soon!
Heirloom Tomato and Avocado Salad
1 large heirloom tomato, cut into bite sized chunks
1/2 large bass avocado, cut into 1/4″ thin slices
5-6 large basil leaves, cut into a chiffonade (thin ribbons)
1 tablespoon pine nuts
1 teaspoon good aged balsamic vinegar or white balsamic vinegar
1 tablespoon extra virgin olive oil
Good salt and fresh pepper to taste
In a bowl, toss all of this together with your hands (avocado is fragile). Shave Piave cheese on top. Serve and enjoy immediately!
*This recipe serves two but can easily be doubled for more guests.
